Discussion:

Why does chilli burn your mouth? Hot peppers contain an alkaline, oil-based molecule called capsaicin, which sneakily trigger the temperature-sensitive pain receptors in your mouth even though the molecule itself doesn't produce heat or cause any real damage

Why does milk reduce the burn? Many milk-based products contain a protein called casein, the casein can help to break down those capsaicin. The capsaicin is the chilli, the milk can get rid of the burn because milk have casein the get rid of the burn.
